L&S Bacon Carbonara
Servings: 2–3

Ingredients:

200g (7 oz) spaghetti (or your favorite pasta)

1 cup grated parmesan cheese (plus extra for serving)

2 large eggs
-
1 package L&S bacon bits
-
3 cloves garlic, minced or smashed

1 tbsp olive oil
-
Freshly ground black pepper

Salt (for pasta water)
Instructions:

Cook the pasta:

Bring a large pot of salted water to a boil.

Add pasta and cook until al dente, reserving 1 cup of the pasta cooking water before draining.

Make the sauce:

In a bowl, whisk together the 2 eggs and 1 cup parmesan until creamy and smooth.

Add a generous amount of freshly cracked black pepper (this is key for real carbonara flavor). Set aside.

Cook the bacon bits and garlic:

In a large skillet over medium heat, heat the olive oil and cook the L&S bacon bits until crispy and the fat renders out.

Add the minced or smashed garlic and sauté for about 30 seconds until fragrant. Remove garlic if you prefer a milder flavor.

Combine pasta and bacon:

Add the drained pasta to the skillet with the bacon. Toss well so the pasta gets coated in the bacon fat. Remove skillet from heat.

Finish the carbonara:

Quickly pour in the egg-parmesan mixture, tossing vigorously to coat the pasta. The residual heat will gently cook the eggs into a silky sauce without scrambling them.

If it looks too thick, add a splash of the reserved pasta water until you get a glossy, creamy consistency.

Plate immediately and sprinkle with extra parmesan and black pepper to taste.
