L&S Bacon Carbonara

Servings: 2–3
Time: 20 minutes

Ingredients:

  • 200g (7 oz) spaghetti (or your favorite pasta)

  • 1 cup grated parmesan cheese (plus extra for serving)

  • 2 large eggs

  • 1 package L&S bacon bits

  • 3 cloves garlic, minced or smashed

  • 1 tbsp olive oil

  • Freshly ground black pepper

  • Salt (for pasta water)


Instructions:

  1. Cook the pasta:

    • Bring a large pot of salted water to a boil.

    • Add pasta and cook until al dente, reserving 1 cup of the pasta cooking water before draining.

  2. Make the sauce:

    • In a bowl, whisk together the 2 eggs and 1 cup parmesan until creamy and smooth.

    • Add a generous amount of freshly cracked black pepper (this is key for real carbonara flavor). Set aside.

  3. Cook the bacon bits and garlic:

    • In a large skillet over medium heat, heat the olive oil and cook the L&S bacon bits until crispy and the fat renders out.

    • Add the minced or smashed garlic and sauté for about 30 seconds until fragrant. Remove garlic if you prefer a milder flavor.

  4. Combine pasta and bacon:

    • Add the drained pasta to the skillet with the bacon. Toss well so the pasta gets coated in the bacon fat. Remove skillet from heat.

  5. Finish the carbonara:

    • Quickly pour in the egg-parmesan mixture, tossing vigorously to coat the pasta. The residual heat will gently cook the eggs into a silky sauce without scrambling them.

    • If it looks too thick, add a splash of the reserved pasta water until you get a glossy, creamy consistency.

  6. Serve:

    • Plate immediately and sprinkle with extra parmesan and black pepper to taste.
