Spicy Italian Sausage, Peppers & Onion Sandwich

Here’s our families favorite way to enjoy our Spicy Italian Sausages!

Ingredients:

  • 4 L&S spicy Italian sausages
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2 bell peppers (red, yellow, or green), sliced
  • 3 garlic cloves, minced
  • 4 medium fresh tomatoes, diced
  • 1 tbsp tomato paste (optional, for deeper flavor)
  • ½ tsp red pepper flakes (optional, for extra spice)
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt & pepper to taste
  • ¼ cup red wine or L&S chicken stock
  • 4 hoagie rolls or crusty Italian bread
  • 4 slices provolone or mozzarella cheese (optional)

Instructions:

1. Cook the Sausage

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides (about 5-7 minutes).
  2. Remove sausages and set aside (they will finish cooking in the sauce).

2. Sauté the Peppers & Onions

  1. In the same skillet, add the remaining 1 tbsp olive oil. Add onions & bell peppers, cooking until softened (about 8 minutes).
  2. Stir in the garlic and cook for 30 seconds, until fragrant.

3. Make the Fresh Tomato Sauce

  1. Add the diced fresh tomatoes, tomato paste (if using), oregano, basil, red pepper flakes, salt, and pepper to the skillet. Stir well.
  2. Pour in red wine or stock and let the sauce simmer for 10 minutes, stirring occasionally, until the tomatoes break down.

4. Simmer the Sausage

  1. Nestle the sausages back into the skillet, cover, and let simmer on low for 10-12 minutes until sausages are fully cooked.

5. Assemble the Sandwiches

  1. Slice open the hoagie rolls and lightly toast them.
  2. Place a sausage in each roll, spoon the peppers, onions, and tomato sauce over the top.
  3. Optional: Add a slice of provolone or mozzarella and broil for 2 minutes until melted.

6. Serve & Enjoy!

Serve hot with a side of fries, a simple salad, or extra sauce for dipping.
