Description

Potato sausage has deep roots in Nebraska’s Swedish and German immigrant communities, who brought their traditional recipes when they settled in the state in the late 1800s and early 1900s. These hearty sausages were a way to stretch meat supplies while making use of staple crops like potatoes and onions, which were easy to store through harsh Midwestern winters.

Swedish Influence 🇸🇪

One of the best-known versions of potato sausage is Potatiskorv, a Swedish sausage made with ground pork, beef, potatoes, onions, and spices. Swedish immigrants, who settled heavily in Nebraska towns like Holdrege (Shawn’s hometown), Stromsburg, and Oakland, continued making this dish for Christmas and holiday feasts—a tradition that still carries on in many Nebraska families today.
