Milano Salami – is a pork and beef salami. We use a nice starter culture to give this salami a nice tang. The air drying process begins after a couple days of fermentation. This salami is ready after a percentage of weight is lost and a safe PH level is reached, typically about 6-8 weeks. – 100g sliced packages = $4.95
