Another product of Shawn’s childhood.  Shawn grew up eating a dish his Mexican Grandma Jesse called “Pork and Chili.”  With its exquisite flavors of fresh tomatoes and jalapeños it seemed only natural we should make into a sausage.  Packaged 4 links to a pack, each package weighing approximately one pound. Price is per package and per pound price.

Huevos Rancheros with L&S Artisan Meats Mexican Chili Sausage

This bold and flavorful huevos rancheros recipe uses L&S Artisan Meats Mexican Chili Sausage to take a classic dish to the next level!

Ingredients (Serves 4)

For the Sauce:
  • 1 tbsp olive oil
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano
For the Huevos Rancheros:
  • 1 lb L&S Artisan Meats Mexican Chili Sausage (crumbled or removed from casing)
  • 4 small corn tortillas
  • 4 large eggs
  • 1 can black beans (optional, warmed)
  • ¼ cup fresh cilantro, chopped
  • ½ avocado, sliced (optional)
  • Salsa or hot sauce, for serving
  • Lime wedges, for garnish

Instructions:

  1. Make the Sauce:

    • Heat olive oil in a pan over medium heat. Add the onions and cook until soft (about 3 minutes).
    • Add the L&S Mexican Chili Sausage and cook until browned and fully cooked.
    • Stir in garlic, then add entire can of black beans (liquid included), paprika, cumin, salt, pepper, oregano, and chipotle powder.
    • Simmer for 5-7 minutes, stirring occasionally, until thickened.
  2. Cook the Eggs: 

    • In the same pan as the sauce, make wells in the sauce and crack the eggs into the wells. Cover the pan and cook the eggs sunny-side up or to your preferred doneness.
  3. Warm tortillas in separate pan.
  4. Serve Immediately:

    • Scoop the eggs with bit of the sauce on to plate and serve with the warmed tortillas for scooping and dipping in the sauce.
    • Drizzle with salsa or hot sauce and serve with lime wedges.
