Garlic & Herb Grilled Lamb Chops

🔥 Serves: 4 | ⏱ Prep Time: 10 min + 1 hr marinating | Cook Time: 8-10 min

Ingredients:

  • 8 lamb chops (rib or loin chops)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard (optional, for extra depth)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)

Instructions:

1. Marinate the Lamb Chops

  1. In a small bowl, mix together olive oil, garlic, rosemary, thyme, lemon zest, lemon juice, Dijon mustard, salt, black pepper, and red pepper flakes.
  2. Rub the marinade all over the lamb chops and place them in a shallow dish or zip-top bag.
  3. Let marinate for at least 1 hour (or up to overnight in the fridge for more flavor).

2. Preheat & Grill

  1. Heat a grill or grill pan to medium-high heat (about 400-450°F).
  2. Remove lamb chops from the marinade and let excess drip off.
  3. Grill for 3-4 minutes per side for medium-rare (internal temp 130°F) or 5-6 minutes per side for medium (135-140°F).

3. Rest & Serve

  1. Transfer the lamb chops to a plate, cover loosely with foil, and let rest for 5 minutes to keep them juicy.
  2. Serve with grilled vegetables, a fresh salad, or roasted potatoes.
