Classic Bangers and Mash with Onion Gravy

This comforting British classic pairs juicy sausages with creamy mashed potatoes and a rich onion gravy. Perfect for a cozy dinner!

Ingredients

For the Bangers (Sausages):

  • One package L&S Irish Bangers
  • 1 tbsp olive oil or butter

For the Mash:

  • 2 lbs (about 4 large) potatoes, peeled and cut into chunks
  • 4 tbsp butter
  • ½ cup warm milk (or heavy cream for extra richness)
  • Salt and pepper to taste
  • ½ tsp garlic powder (optional)
  • ½ tsp mustard (Dijon or English mustard, optional)

For the Onion Gravy:

  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 1 tbsp flour
  • 1 ½ cups beef or chicken broth
  • 1 tsp Worcestershire sauce
  • ½ tsp Dijon mustard
  • Salt and pepper to taste

Instructions

1. Cook the Sausages:
Heat a pan over medium heat with a bit of oil. Cook the sausages for about 10-12 minutes, turning occasionally, until browned and cooked through. Remove and keep warm.

2. Make the Mashed Potatoes:

  • Boil the potatoes in salted water for about 15 minutes or until fork-tender.
  • Drain and return to the pot.
  • Mash with butter, warm milk, garlic powder, mustard, salt, and pepper until smooth and creamy.

3. Prepare the Onion Gravy:

  • In the same pan used for sausages, melt butter and cook onions over medium heat until soft and caramelized (about 10 minutes).
  • Stir in the flour and cook for 1-2 minutes.
  • Gradually add broth, whisking to prevent lumps. Stir in Worcestershire sauce, mustard, salt, and pepper. Simmer until thickened (about 5 minutes).

4. Assemble and Serve:
Spoon mashed potatoes onto a plate, top with sausages, and pour over the rich onion gravy. Serve with peas or roasted vegetables on the side.

Tips & Variations:

  • Upgrade the mash: Use half potatoes, half parsnips for a sweeter flavor.
  • Make it extra creamy: Mix in some sour cream or cream cheese.
  • Go gourmet: Try adding caramelized apples to the gravy for a sweet-savory twist.
