Ham Hocks

Smoked to a partially cooked state. They are great for soups and other dishes, but they need further cooking. We package them two hocks to pack getting to around one pound. Price listed is the approximate per package price.

Description

Classic Ham & Beans with Ham Hocks

Ingredients:

  • 1 lb dry beans (Ecuador has so many great ones!)
  • 1-2 L&S ham hocks
  • 6 cups L&S chicken broth
  • 1 onion, chopped
  • 2 carrots, diced (optional)
  • 2 celery stalks, diced (optional)
  • 3 garlic cloves, minced
  • 1 bay leaf
  • ½ tsp dried thyme (or 1 tsp fresh)
  • ½ tsp black pepper (or to taste)
  • ½ tsp smoked paprika (optional, for extra depth)
  • Salt to taste (after cooking)
  • 1 tbsp apple cider vinegar (optional, for brightness)
  • Chopped parsley for garnish (optional)

Instructions:

1. Prepare the Beans

  • Quick soak method: Boil the beans in a large pot with water for 2 minutes, then remove from heat and let sit for 1 hour. Drain.
  • Overnight soak method: Soak the beans in plenty of water overnight. Drain before using.

2. Cook the Ham Hocks

  • In a large pot or Dutch oven, add the ham hocks, broth, and bay leaf.
  • Bring to a boil, then reduce to a simmer and cook for 1 hour, covered.

3. Add the Beans & Vegetables

  • Add soaked beans, onion, garlic, carrots, celery, thyme, paprika, and black pepper to the pot.
  • Cover and simmer on low for 1.5 to 2 hours, stirring occasionally, until beans are tender.

4. Shred the Ham & Finish the Dish

  • Remove the ham hocks and shred the meat off the bones. Discard the bones and skin, then return the shredded meat to the pot.
  • Taste and add salt if needed (ham hocks can be salty, so adjust carefully).
  • Stir in apple cider vinegar for brightness (optional).

5. Serve & Enjoy!

  • Serve hot with cornbread, rice, or crusty bread.
  • Garnish with chopped parsley or green onions if desired.

Slow Cooker Method

  • Add all ingredients to a slow cooker and cook on LOW for 6-8 hours or HIGH for 4-5 hours.
  • Remove ham hocks, shred the meat, and return to the pot before serving.

Instant Pot (Pressure Cooker) Method

  • Add all ingredients to the Instant Pot and cook on HIGH pressure for 45 minutes.
  • Let the pressure release naturally for 15 minutes, then manually release the rest.
  • Remove ham hocks, shred meat, and stir back into the beans.
