Savory Pork Meatloaf


Ingredients (Serves 6)

For the Meatloaf:

  • 1 ½ lbs L&S ground pork
  • ½ cup breadcrumbs (panko or regular)
  • ½ cup beef stock
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional, for depth)
  • ½ tsp dried thyme or Italian seasoning

For the Glaze:

  • ¼ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar or Worcestershire sauce
  • ½ tsp mustard (optional)

Instructions

1. Preheat & Prep:

  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with parchment paper or lightly grease a loaf pan.

2. Make the Meatloaf Mixture:

  • In a small bowl, mix the breadcrumbs and beef stock. Let sit for 5 minutes (this keeps the meatloaf tender).
  • In a large bowl, combine the ground pork, soaked breadcrumbs, onion, garlic, egg, Worcestershire sauce, mustard, salt, pepper, paprika, and thyme. Mix gently until just combined—don’t overwork it!

3. Shape & Bake:

  • Form the mixture into a loaf shape on the prepared baking sheet (or press into a loaf pan).
  • Bake for 30 minutes.

4. Add the Glaze & Finish Baking:

  • In a small bowl, whisk together ketchup, brown sugar, vinegar, and mustard.
  • After 30 minutes of baking, spread the glaze over the meatloaf.
  • Return to the oven and bake for another 20-25 minutes, or until the internal temperature reaches 160°F (71°C).

5. Rest & Serve:

  • Let the meatloaf rest for 10 minutes before slicing.
  • Serve with mashed potatoes, roasted veggies, or a fresh side salad.
