Savory Pork Meatloaf
Ingredients (Serves 6)
For the Meatloaf:
- 1 ½ lbs L&S ground pork
- ½ cup breadcrumbs (panko or regular)
- ½ cup beef stock
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional, for depth)
- ½ tsp dried thyme or Italian seasoning
For the Glaze:
- ¼ cup ketchup
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar or Worcestershire sauce
- ½ tsp mustard (optional)
Instructions
1. Preheat & Prep:
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Make the Meatloaf Mixture:
- In a small bowl, mix the breadcrumbs and beef stock. Let sit for 5 minutes (this keeps the meatloaf tender).
- In a large bowl, combine the ground pork, soaked breadcrumbs, onion, garlic, egg, Worcestershire sauce, mustard, salt, pepper, paprika, and thyme. Mix gently until just combined—don’t overwork it!
3. Shape & Bake:
- Form the mixture into a loaf shape on the prepared baking sheet (or press into a loaf pan).
- Bake for 30 minutes.
4. Add the Glaze & Finish Baking:
- In a small bowl, whisk together ketchup, brown sugar, vinegar, and mustard.
- After 30 minutes of baking, spread the glaze over the meatloaf.
- Return to the oven and bake for another 20-25 minutes, or until the internal temperature reaches 160°F (71°C).
5. Rest & Serve:
- Let the meatloaf rest for 10 minutes before slicing.
- Serve with mashed potatoes, roasted veggies, or a fresh side salad.
