Chorizo Tacos with Fresh Salsa and Avocado
A simple and flavorful recipe that lets L&S Artisan Meats Mexican Chorizo shine in a classic chorizo taco. This dish is perfect for breakfast, lunch, or dinner. The savory and spicy chorizo pairs wonderfully with a fresh salsa and creamy avocado.
Ingredients (Serves 4)
- 1 lb L&S Artisan Meats Mexican Chorizo
- 8 small corn tortillas
- 1 small red onion, finely chopped
- 1 small tomato, diced
- 1 small jalapeño, minced (optional for extra heat)
- 1 tbsp cilantro, chopped
- 1 lime, cut into wedges
- 1 avocado, sliced
- Salt and pepper to taste
- Hot sauce (optional, for extra spice)
Instructions:

Cook the Chorizo:
- In a large skillet, cook the Mexican chorizo over medium heat, breaking it up with a spoon as it cooks. Stir occasionally until it’s browned and fully cooked, about 7-10 minutes. Set aside.

Prepare the Salsa:
- While the chorizo is cooking, combine the red onion, tomato, jalapeño (if using), and cilantro in a small bowl.
- Squeeze half the lime over the mixture and season with a pinch of salt and pepper. Mix well and set aside.

Warm the Tortillas:
- Heat the corn tortillas in a dry skillet or over an open flame for a few seconds on each side until they’re warm and slightly charred.

Assemble the Tacos:
- For each taco, add a generous spoonful of cooked chorizo to the center of the tortilla.
- Top with a spoonful of salsa, a few slices of avocado, and a squeeze of fresh lime juice.
