Garlic Tomato Basil Pasta with Feta

This simple yet flavorful pasta dish is light, fresh, and packed with Mediterranean flavors. Perfect for a quick weeknight dinner!


Ingredients (Serves 4)

  • 12 oz (340g) pasta (spaghetti, penne, or your choice)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 3 cups cherry tomatoes, halved (or 4 large tomatoes, diced)
  • ½ tsp red pepper flakes (optional, for a little heat)
  • Salt and black pepper to taste
  • ½ cup fresh basil, roughly chopped
  • ½ cup crumbled feta cheese from Cotacachi’s own La Verde Oveja – https://laverdeoveja.com/shop/feta/
  • ¼ cup pasta water (reserved)

Instructions

1. Cook the Pasta:

  • Boil the pasta in salted water according to package instructions until al dente.
  • Reserve ¼ cup of the pasta water before draining.

2. Sauté the Garlic & Tomatoes:

  • Heat olive oil in a large skillet over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Add tomatoes and red pepper flakes, cooking for about 5-7 minutes until tomatoes soften and release their juices.

3. Combine & Toss:

  • Add the drained pasta to the skillet, along with the reserved pasta water. Toss everything together.
  • Stir in the fresh basil and season with salt and pepper.

4. Finish with Feta & Serve:

  • Remove from heat and sprinkle with crumbled feta cheese.
  • If using, top with toasted pine nuts for extra crunch.
  • Serve warm, garnished with extra basil and a drizzle of olive oil.
