Homemade Chicken Gravy
Ingredients:
- 4 tbsp unsalted butter or chicken fat (from drippings)
- 4 tbsp all-purpose flour
- 2 cups (1 package) L&S chicken stock
- ½ cup milk or heavy cream (optional for a creamy texture)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried thyme (or fresh thyme leaves)
- ½ tsp black pepper (or to taste)
- ½ tsp salt (adjust as needed)
- 1 tsp Worcestershire sauce (optional, adds depth)
Instructions:

Make a Roux:
- In a saucepan over medium heat, melt the butter (or chicken drippings).
- Whisk in the flour and cook for about 1-2 minutes, stirring constantly until it turns light golden brown (this removes the raw flour taste).

Add the Broth:
- Slowly whisk in the chicken broth, stirring continuously to prevent lumps.
- If using milk or cream, add it now for a richer gravy.

Season & Simmer:
- Stir in garlic powder, onion powder, thyme, salt, and black pepper.
- Add Worcestershire sauce if using.
- Let the gravy simmer for about 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.

Adjust & Serve:
- Taste and adjust seasoning if needed.
- If the gravy is too thick, add a little more broth.
- Strain for an extra smooth texture (optional).
Serving Ideas:
- Over roast chicken or fried chicken
- With mashed potatoes or biscuits
- As a dip for fries or roasted veggies
