Good Food, Great Gatherings
Savory Sausage Stuffing
Let’s be honest, Thanksgiving wouldn’t be Thanksgiving without a big dish of homemade stuffing! And while everyone has their favorite version, we think adding a little L&S sausage takes this holiday classic to a whole new level.
Whether you prefer the slightly sweet flavor of our Apple & Caramelized Onion Sausage, the traditional holiday flavors of our Sage Sausage (remember how hard it is to find Sage in Ecuador, no need to worry with L&S around), or the savory kick of our Onion Mustard Sausage, each brings something special to the table.
And don’t forget the stock! Our L&S Chicken Stock adds rich, slow-cooked flavor that brings everything together. No bland, boring stuffing here!
Homemade Sausage & Herb Stuffing
Prep Time: 20 minutes
Cook Time: 40–50 minutes
Servings: 8–10
Ingredients
- 1 lb L&S Artisan Meats Sausage (Apple & Caramelized Onion, Sage, or Onion Mustard)
- 10–12 cups cubed day-old bread (French bread, sourdough, or a combination)
- 4 tablespoons butter
- 1 large onion, finely diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 2–3 cups L&S Chicken Stock
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh sage, chopped (optional if using Sage Sausage)
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- ½ teaspoon freshly ground black pepper
- Salt to taste
- 2 large eggs, lightly beaten (optional, for a firmer stuffing)
Instructions
1. Prepare the bread.
Preheat your oven to 350°F (175°C). Spread the bread cubes on a baking sheet and toast for 10–15 minutes until lightly golden and dry. Transfer to a large mixing bowl.
2. Brown the sausage.
Remove the sausage from its casing, if necessary. In a large skillet over medium heat, cook the sausage, breaking it into small crumbles, until browned and fully cooked. Transfer to the bowl with the bread, leaving the flavorful drippings in the skillet.
3. Sauté the vegetables.
Add the butter to the same skillet. Stir in the onion and celery and cook for 6–8 minutes, until softened. Add the garlic, parsley, sage, thyme, and black pepper. Cook for another minute until fragrant.
4. Bring everything together.
Add the vegetable mixture to the bread and sausage. Pour in 2 cups of warm L&S Chicken or Beef Stock, tossing gently to combine. Add more stock, a little at a time, until the bread is moist but not soggy.
For a stuffing that holds together more firmly, allow the mixture to cool slightly before stirring in the beaten eggs.
5. Bake until golden.
Transfer the stuffing to a generously buttered 9×13-inch baking dish. Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15–25 minutes, until the top is golden brown and slightly crispy and the center reaches 165°F (74°C).
6. Serve and enjoy!
Let the stuffing rest for 5–10 minutes before serving. Enjoy alongside your Thanksgiving ham, turkey, or whatever else is making an appearance on your holiday table!
A Little L&S Tip: Choose Your Sausage!
Apple & Caramelized Onion Sausage: Adds a touch of sweetness that pairs beautifully with savory herbs and buttery bread. Try adding a diced apple for extra flavor!
Sage Sausage: The classic Thanksgiving choice! Packed with traditional herb flavor, it’s perfect for anyone who loves an old-fashioned holiday stuffing.
Onion Mustard Sausage: A slightly tangy, savory twist that pairs especially well with our smoked hams.
And don’t forget the stock! Our L&S Chicken Stock is perfect for a traditional stuffing, while our Beef Stock adds a deeper, richer flavor. Either one makes a delicious difference.
