Corned Beef: Preservation Became Tradition
Long before refrigeration, preserving meat wasn’t a culinary trend, it was survival.
Corned beef was created out of necessity. Large cuts of beef, especially brisket, needed a way to last through long winters, ocean voyages, and uncertain food supplies. Salt became the answer.
Beef was packed in coarse grains of salt — called “corns” of salt — which slowly drew out moisture and prevented spoilage. This curing process didn’t just preserve the meat; it transformed it. The salt penetrated deep into the muscle, tenderizing the brisket and developing the rich, savory flavor we now associate with corned beef.
In the 1800s, Irish immigrants in New York City embraced this method because brisket was affordable and salt-curing made it practical. What began as preservation became tradition.
Corned beef isn’t simply seasoned beef. It’s time, salt, and patience working together. The quality of the meat determines the tenderness. The balance of the cure and seasonings determines the flavor.
At L&S Artisan Meats, we corned our beef the old-fashioned traditional way, allowing the salt cure to work slowly and naturally. No shortcuts. No unnecessary additives. Just a careful cure that honors why corned beef existed in the first place. Our corned beef is seasoned while in the brine, whole peppercorns, coriander, thyme, ground ginger, whole all spice, and anise pods. We also send this incredible mix of spices with our roasts to add to your pot.
When you simmer that roast low and slow, you’re finishing a preservation process that began days earlier, and centuries ago.
From farmer to feast.
And that’s what makes it worth celebrating.
