Description
Also called “Lomo Embuchado” a similar product from Spain, Lonzino dates back to ancient Italy, where curing meats with salt, spices, and air drying was a necessity before refrigeration. Unlike fatty cured meats like prosciutto or coppa, lonzino is made from lean pork loin, giving it a tender, delicate texture, often associated with regions like Umbria, Tuscany, and Marche.
